There is a part of me that isn't satisfied until I take something I met inside my head, lift it out just as it is, and meet it again in the real world.
All-brown pudding à la mode!
The thought came years ago, in the back of a three-wheeler kicking up dust through Colombo, Sri Lanka, as I forced myself to start eating a sweet I had just bought.
The sweet is called watalappan — a pudding made with coconut milk instead of cow's milk, brown because it uses palm sugar, much like muscovado. One bite and a dense sweetness and the scent of cardamom spread dreamily, and at once it calls for tea. And Sri Lanka, after all, is one of the great tea-producing lands.
If a brown pudding is to be the star, then the whole pudding à la mode ought to be dyed brown. And so should the tea, the vessels, the napkins, the uniforms of that tea party. An all-brown pudding à la mode, an all-brown tea party. What flavours will such a dream summon in reality?
