2021.12/5-6 | Tea Lesson: Telling Seven Colours by Scent, with Madeleines at TEATON | Susumu Onishi (teteria) / Takashi Tsurumi (Café Lisette)
TEATON's first tea lesson, led by Susumu Onishi of teteria. Two days to learn from Onishi about tea, how to brew it, and the differences between teas — and to find your own favourite by telling them apart by scent. There will be a demonstration and you will brew tea yourself (please bring writing materials and a tea towel). Tsurumi's dessert theme is the madeleine, a sweet deeply tied to tea; he will vary the flour and fat to match the lecture's comparisons. For those inclined to go in search of lost time.
